Ingredients

- 2 tbsp oil
- 1 onion – diced
- 1 cup chopped spinach *optional
- 1/2 tbsp Italian seasoning
- 1 tsp each (salt+pepper)
- 3 cloves garlic – minced
- 1 tbsp – Calabrian chili paste
- 1 tbsp tomato paste
- 1 (15oz) canned crushed tomatoes
- 1 & 1/2 cups vegetable broth
- 2 cups spinach – chopped
- 9oz package of ravioli of choice
- 1/4 cup heavy cream
Instructions
- In a pot, heat up oil on med high heat. Add the onions and cook for 2-3 mins.
- Next add the seasonings along with the garlic, Calabrian + tomato paste and spinach.
- Stir in the crushed tomatoes and vegetable broth. Taste and add more salt or seasoning if desired.
- Add the ravioli. Cover the pot with a lid and lower the heat to med/low. Simmer for 5-7 mins until the raviolis float to the top.
- Turn the heat off and stir in the heavy cream and serve immediately! Garnish with shredded cheese and enjoy!
