Ravioli Soup

Ingredients

  • 2 tbsp oil
  • 1 onion – diced
  • 1 cup chopped spinach *optional 
  • 1/2 tbsp Italian seasoning
  • 1 tsp each (salt+pepper)
  • 3 cloves  garlic – minced
  • 1 tbsp – Calabrian chili paste 
  • 1 tbsp tomato paste
  • 1 (15oz) canned crushed tomatoes
  • 1 & 1/2 cups vegetable broth
  • 2 cups spinach – chopped
  • 9oz package of ravioli of choice
  • 1/4 cup heavy cream

Instructions

  1. In a pot, heat up oil on med high heat. Add the onions and cook for 2-3 mins.
  2. Next add the seasonings along with the garlic, Calabrian + tomato paste and spinach. 
  3. Stir in the crushed tomatoes and vegetable broth. Taste and add more salt or seasoning if desired.
  4. Add the ravioli. Cover the pot with a lid and lower the heat to med/low. Simmer for 5-7 mins until the raviolis float to the top.
  5. Turn the heat off and stir in the heavy cream and serve immediately! Garnish with shredded cheese and enjoy!
