Summer is here and theres no better way to celebrate than a pitcher of refreshing margaritas! I love making pitcher style drinks because I hate being in the kitchen making single serving drinks all night long, and it’s just easy because it’s a self serve type of drink!
This recipe makes 4 drinks, but you can always double or triple the recipe to your liking. You can make this drink in advance and have it sit in the fridge until you’re ready to serve. Just make sure to give it a good stir!
This recipe can be a mocktail as well, just omit the tequila. Typical margarita recipe requires orange liqueur, but I decided to omit that because it’s just too sweet and takes away from the lime juice flavor. So adding a hint of agave and coconut cream to sweeten it really brings out the flavors.
KEY INGREDIENTS
TEQUILA: Good margaritas require good tequila, you can use your favorite type of tequila but for this recipe I highly recommend a blanco or even a reposado.
PINEAPPLE JUICE: I had a pineapple and just threw some chunks in a blender with a little bit of water and poured it through a mesh stainer and it was the best pineapple juice I’ve incorporated into a drink. If you don’t want to do all that, you can use a good quality pineapple juice with no added sweeteners.
AGAVE: You can simply add honey, simple syrup if you don’t have agave and even maple syrup! You just need a little bit of sweetness and it really brings the whole drink together.
LIME JUICE: No margarita is good without some fresh lime juice!
COCONUT CREAM: This is a key ingredient, and because it’s coconut cream and not milk, you will need to use a blender to make sure it blends out smoothly.
GARNISH: I toasted some shredded coconut for a garnish on the rim but you can use definitely use a sugar and lime zest mixture for a rim as well.
