Chuys Boom Boom Sauce

Ingredients

Scale
  • 1 cup roughly chopped cilantro
  • 2 tomatillos
  • 4 stalks of scallions roughly chopped
  • 1/2 of a jalapeño
  • 1/2 of a Serrano
  • juice of 1/2 lime
  • 1 (16oz) bottle of 505 Hatch Chile sauce
  • 1/2 cup water
  • 1 tsp each: salt, sugar, garlic powder, adobe seasonings and black pepper
  • 8 oz of shredded yellow American cheese

Instructions

  1. Into a blender cup add the following ingredients: cilantro, tomatillos, scallions, jalapeño, Serrano, lime juice, hatch Chile sauce, water and all the seasonings.
  2. Blend until it’s smooth and pour into a sauce pan with 1 tbsp of oil on medium heat.
  3. Simmer for 5-7 mins, stirring continuously and add in the cheese.
  4. Cook corn tortillas on medium heat with little bit of oil and dip the tortillas into the sauce, fill them up with beans, veggies or just cheese and roll them up. Place in a baking tray and add more sauce on top and bake at 370F for 7-10 mins. Garnish with scallions and serve with rice and beans.
