- 3 cups rolled oats
- 1/4 cup oat flour
- 1 tablespoon flax and chia seed mix
- 1 teaspoon cinnamon
- 1 teaspoon sea salt
- 2 tablespoons peanut butter or almond butter
- 1/3 cup brown sugar or coconut sugar
- 1/4 cup coconut oil, melted
- 1 tablespoon maple syrup
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 360°F and line a baking sheet with parchment paper.
- In a large bowl, mix together the rolled oats, oat flour, flax and chia seeds, cinnamon, and sea salt.
- In a separate bowl, whisk together the nut butter, brown sugar (or coconut sugar), melted coconut oil, maple syrup, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until everything is evenly coated.
- Spread the mixture evenly onto the prepared baking sheet.
- Bake for 20–25 minutes, stirring halfway through, until golden and fragrant.
- Remove from the oven and let cool completely the granola will crisp up as it cools
Notes
- Stir in chocolate chips once the granola has fully cooled to prevent melting.
- Add chopped nuts or shredded coconut for extra texture.
- Store in an airtight container for up to two weeks.
