Ingredients

  • 3 cups rolled oats
  • 1/4 cup oat flour
  • 1 tablespoon flax and chia seed mix
  • 1 teaspoon cinnamon
  • 1 teaspoon sea salt
  • 2 tablespoons peanut butter or almond butter
  • 1/3 cup brown sugar or coconut sugar
  • 1/4 cup coconut oil, melted
  • 1 tablespoon maple syrup
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 360°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the rolled oats, oat flour, flax and chia seeds, cinnamon, and sea salt.
  3. In a separate bowl, whisk together the nut butter, brown sugar (or coconut sugar), melted coconut oil, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until everything is evenly coated.
  5. Spread the mixture evenly onto the prepared baking sheet.
  6. Bake for 20–25 minutes, stirring halfway through, until golden and fragrant.
  7. Remove from the oven and let cool completely the granola will crisp up as it cools

Notes

  • Stir in chocolate chips once the granola has fully cooled to prevent melting.
