Ingredients

- 4 overly ripe, mashed bananas
- 3 eggs
- 1/2 cup of canola oil
- 1/4 cup melted butter
- 1/4 cup of water
- 1/2 cup of sugar
- 1 tbsp vanilla extract
- 2 & 1/2 cups of flour
- 1/2 teaspoon salt
- 2 teaspoons baking soda
- 1/2 cup chocolate chips
- 1/2 cup of roughly chopped walnuts
Instructions
- Preheat the oven to 400F degrees. Line muffin tin with liners.
- In a large bowl add the bananas and mash them up using a fork or potato masher. Add in the all the wet ingredients and mix until it’s well combined.
- Next sprinkle in the baking soda and flour. Using a rubber spatula mix until it’s all well combined.
- Fold in the chocolate chips and nuts. Pour 3/4 of the batter into the muffin liners.
- Bake at 400F for 5 mins and then lower the oven temperature back to 10-13 mins, until the tops are lightly golden brown and centers are set. Stick a toothpick in the center of a muffin to test for doneness. If it comes out clean, the muffins are done.
Notes
- For eggless option, replace the 3 eggs with 3/4 cup yogurt. I like to use full fat (whole milk) or greek yogurt when I substitute for any eggless recipes because whole milk yogurt holds up and bakes well.
