Chocolate Chip Banana Bread Muffins

Ingredients

  • 4 overly ripe, mashed bananas
  •  3 eggs
  •  1/2  cup of canola oil
  • 1/4 cup melted butter
  • 1/4 cup of water
  • 1/2  cup of sugar
  • 1 tbsp vanilla extract
  • 2 & 1/2  cups of flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2  cup chocolate chips
  • 1/2 cup of roughly chopped walnuts

Instructions

  1. Preheat the oven to 400F degrees. Line muffin tin with liners.
  2. In a large bowl add the bananas and mash them up using a fork or potato masher. Add in the all the wet  ingredients and mix until it’s  well combined.
  3. Next sprinkle in the baking soda and flour. Using a rubber spatula mix until it’s all well combined.
  4. Fold in the chocolate chips and nuts. Pour 3/4 of the batter into the muffin liners.
  5. Bake at 400F for 5 mins and then lower the oven temperature back to 10-13 mins, until the tops are lightly golden brown and centers are set. Stick a toothpick in the center of a muffin to test for doneness. If it comes out clean, the muffins are done.

Notes

  • For eggless option, replace the 3 eggs with 3/4 cup yogurt. I like to use full fat (whole milk) or greek yogurt when I substitute for any eggless recipes because whole milk yogurt holds up and bakes well.
