Masala Noodles

Ingredients

  • 1 packet of thin spaghetti 1lb cooked and drained (I only used half the box for this recipe 1/2 lb)
  • 2 tbsp oil
  • 1 tbsp toasted sesame seed oil
  • 1 tsp cumin seeds
  • 2 dried chilies
  • 1 carrot – sliced
  • 1 onion – sliced
  • 1 bell pepper – sliced
  • 1/4 cup frozen peas
  • 1 tbsp grated garlic
  • 1 tsp each (salt+ pepper)
  • 2 tsp garam masala
  • 2 tsp thana jeeru (ground coriander + cumin)
  • 1 tsp cayenne pepper
  • 2 tbsp soy sauce
  • 1 tbsp chili crunch (from trader joes or momofuku)
  • 1 tbsp hoisin sauce
  • 2 tsp sambal or chili sauce

Instructions

  1. In a large wok or pan, heat up some oil on med/high heat.
  2. Add the cumin seeds and dried red chilies. Cook for 1-2 mins.
  3. Next add the veggies – onions, peppers, carrots and peas. cook for 2-3 mins and add in all your dry spices.
  4. Next add in the cooked noodles and all the sauces. Turn the heat off and garnish with scallions. Enjoy!
