- 6–8 large golden potatoes thinly sliced
- 4 tbsp butter
- 4 tbsp all purpose flour
- 1 & 1/3 cups heavy whipping cream
- 1/4 cup milk
- 1/4 cup freshly grated parmesan cheese
- 1 cup sharp yellow cheddar grated
- 1 cup sharp white cheddar grated
- 2 tsp each: salt and freshly ground black pepper, garlic + onion powder
- Finely chopped chives for garnish
Instructions

Grease a 10×7 baking dish with butter. Preheat oven to 350°F

Peel and slice potatoes using a mandolin. Soak them in warm water for 10-15 mins.

In a sauce pan, heat up the butter over medium heat. Add all the seasonings and cook for 30 seconds. Add the flour and whisk until you have no lumps. Next add the milk and whisk again to make sure everything is lump free.
- Turn heat on low and slowly whisk in the heavy cream. Whisk in the Parmesan cheese until everything is well incorporated. Simmer on med/low heat for 5 mins.

Stack the potato slices and arrange them upright in the greased baking dish. Pour the sauce over the potatoes. Sprinkle with both cheddar cheeses.

Bake for 30-40 min until potatoes are fork tender. Garnish with chives or fresh herbs before serving. Enjoy!
