Kebab Chopped Cheese Sub

Ingredients

For the Kebab Filling:

  • 1 lb ground chicken
  • 1/2 cup finely chopped red onion
  • 1/2 cup chopped green pepper
  • 1/2 tbsp soy sauce
  • 2 tablespoons chili garlic sauce (adjust to your spice preference)
  • 1/2 tbsp tomato paste
  • 2 tsp each: ground coriander, ground cumin, garlic powder, salt & garam masala
  • 1 tsp turmeric powder
  • 1/2 tsp cayenne pepper

For the Sub:

  • 2 sub rolls (toasted)
  • 4 sliced cheese (cheddar, American, or a mix)

Scallion Garlic Mayo

  • 1 cup mayonnaise
  • 1 jalapeño – roughly chopped 
  • 2 stalks scallions
  • 2 cloves garlic
  • 1/4 cup roughly chopped cilantro
  • salt to taste

Instructions

For the Kebab Filling:

  1. In a hot skillet, start browning the meat, add the peppers + onions. Cook for 2-3 mins.
  2. Add the soy sauce, tomato paste, chili garlic paste and all the spices. Mix everything until its well combined and meat it cooked. 

Scallion Garlic Mayo

  1. Add everything into a blender and blend until everything is nice and smooth. Adjust for salt.

For the Sub:

  1. Slice the sub roll down the middle and hollow out some of it out, add sliced cheese and toast under the broiler until cheese is nice and melted.
  2. Once the bread is nice and toasty, spread on the mayo add the ground kebab mixture and enjoy!

Notes

For vegetarian option, swap out the ground chicken for crumbled tofu or paneer! I would use 12oz of tofu or paneer.
