  • Author: Sweta Patel
  • Total Time: 25
  • Yield: 4-6 1x

Ingredients

Scale
  • 1 pint cherry tomatoes, halved or quartered
  • 1 small shallot, minced
  • Handful of fresh basil leaves, chopped
  • 2 garlic cloves, minced
  • 1 tablespoon Calabrian chili
  • Salt and pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons balsamic glaze
  • Freshly grated Parmesan cheese, for garnish
  • Soft cheese of choice I used Boursin cheese but you can use (ricotta, burrata, cream cheese, or goat cheese)

Instructions

  1. In a medium bowl, add the cherry tomatoes, minced shallot, garlic, and chopped basil. Season with salt and pepper to taste.
  2. Drizzle with the olive oil and mix gently until everything is well combined.
  3. Spread your soft cheese of choice onto a serving plate or shallow bowl.
  4. Spoon the tomato mixture over the cheese.
  5. Garnish with freshly grated Parmesan and drizzle with balsamic glaze. Serve immediately with toasted baguette slices, crostini, or crackers.

Notes

  • Add a splash of fresh lemon juice for extra brightness.
  • Swap Calabrian chili for red pepper flakes if you prefer milder heat.
  • Let the tomato mixture sit for 10–15 minutes before serving to deepen the flavor.
