- 1 pint cherry tomatoes, halved or quartered
- 1 small shallot, minced
- Handful of fresh basil leaves, chopped
- 2 garlic cloves, minced
- 1 tablespoon Calabrian chili
- Salt and pepper, to taste
- 2 tablespoons extra virgin olive oil
- 1–2 tablespoons balsamic glaze
- Freshly grated Parmesan cheese, for garnish
- Soft cheese of choice I used Boursin cheese but you can use (ricotta, burrata, cream cheese, or goat cheese)
Instructions
- In a medium bowl, add the cherry tomatoes, minced shallot, garlic, and chopped basil. Season with salt and pepper to taste.
- Drizzle with the olive oil and mix gently until everything is well combined.
- Spread your soft cheese of choice onto a serving plate or shallow bowl.
- Spoon the tomato mixture over the cheese.
- Garnish with freshly grated Parmesan and drizzle with balsamic glaze. Serve immediately with toasted baguette slices, crostini, or crackers.
Notes
- Add a splash of fresh lemon juice for extra brightness.
- Swap Calabrian chili for red pepper flakes if you prefer milder heat.
- Let the tomato mixture sit for 10–15 minutes before serving to deepen the flavor.
