Today I’m sharing this mouth-watering Indian-inspired sandwich that is similar to a club sandwich, but with a twist. Instead of boring old meat and cheese, we’re going to fill our sandwich with a spicy potato filling, crisp cucumbers, sweet beets, juicy tomatoes, and zesty onions. And to take it to the next level, we’ll top it all off with a creamy cilantro mayo. So grab your Hero bread and let’s get started!

The first step is to prepare the filling. Start by boiling some potatoes until they are tender. Once they are done, drain them and mash them up in a bowl. Add in some finely chopped onions, green chilies, to a pan with a little bit of oil. Add some garam masala, cumin and coriander powder to the mixture. Ingredients

Potato Filling

  • 2 large potatoes – Cooked and peeled
  • 2 tbsp oil
  • 1 small onion – diced
  • 1 green chili – minced
  • 2 cloves garlic – minced
  • 1/4 cup cilantro – chopped
  • 1 tsp garam masala
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp salt & sugar (each)
  • 1 tsp lemon juice

Sandwich Toppings

  • 1 tomato – sliced
  • 1 cucumber – sliced
  • 1 small red onion – sliced
  • 1 large beet (cooked) – sliced
  • lettuce – torn into pieces
  • Loaf of white bread

Cilantro Mayonnaise

  • 1/2 cup mayonnaise
  • 1 tbsp cilantro – minced
  • 1 green chili – minced
  • 1 clove garlic – minced
  • salt and pepper to taste

Instructions

Potato Filling

  1. In a med pan, heat up the oil over med heat. Add the onions + green chili and cook for 2 – 3 mins. Next add the garlic and cook for 30 seconds. Add the potatoes into using the back of your spatula mash them down.
  2. Add all the seasonings and give everything a good stir until it’s well incorporated. Sprinkle in the chopped cilantro and turn off the heat and set the filling aside.
  3. In a bowl mix all the ingredients together listed under “cilantro mayo” and set aside.

Assembly

  1. Toast both side of the bread and spread a layer of cilantro mayo on both pieces of the bread.
  2. Spread the potato filling on top and layer the veggies, lettuce, tomato, cucumbers, onions and beets.
  3. Top it off with the other slice of bread and enjoy!
