Cake
- 1 box of vanilla yellow cake mix
- Replace oil with equal amount of melted butter
- Replace water with equal amount of milk
- I used 3 eggs but you can substitute with 1/3 cup full fat yogurt
- 2 tbsp of biscoff cookie butter
Tres Leches Mixture
- 1 cup whole milk
- 1 cup sweetened condensed milk
- 1 cup evaporated milk
- 2 tbsp biscoff cookie butter
Whipped Cream
- 1 quart heavy whipping cream
- 1/4 cup powdered sugar
- 2 tbsp cream cheese
Additional toppings/garnish
- 1/4 cup biscoff cookie butter – melted
- 1 cup biscoff cookies crushed
Instructions
Cake
- In a bowl, mix the box cake mix along with everything that’s directed on the back of the package and 2 tbsp of biscoff cookie butter.
- Mix everything together until it’s well incorporated and transfer into a 9X13 baking pan. Bake in the oven as directed from the package instructions.
- Once the cake is baked, let it cool down for 5 minutes and proceed to poke holes into the cake using a fork. Poke all over and set cake aside to cool.
Tres Leches Mixture
- Mix all the ingredients together into a measuring cup and set aside.
Whipped Cream
- Into a blender or magic bullet, add the heavy whipping cream, powdered sugar and cream cheese. Blend until stiff peaks form.
Assembly
- Once the cake is cooled and you’ve poked holes into it, pour the tres leches mixture all over the cake and let it absorb. This takes about 1-2 mins.
- Next spread a good layer of the whipped cream on top of the cake.
- Pour the melted biscoff all over the top, you can drizzle this all over or just spread a thin even layer in the middle of the cake.
- Garnish the edges of the cake with crushed biscoff cookies or you can garnish all over. Enjoy!
Notes
- This cake can be made day before, make sure to cover the top before placing in the fridge. The best part about this cake being made the day before is all the flavors absorb so well and the texture of the cake is pillow soft.
- You can use any box cake mix you like as long as it’s yellow cake mix. I love to replace the water and oil with milk and melted butter because its just gives the cake a bakery like taste. You can also replace the eggs with yogurt for an eggless option.
- I use my blendtec to make the whipped cream, but you I’ve also made it using my nurti bullet. If you don’t have either of those options, you can use a hand held electric mixture and whisk for 5-7 minutes until you have still peaks.
