If the famous whole foods Berry Chantilly cake had a baby with a perfectly moist tres leches cake, this would be it!
If theres one thing that I love the most is a tres leches cake, every spoonful is filled with a sweet milk mixture with an almond mascarpone flavored whipped cream.
If you haven’t had the Whole Foods berry Chantilly cake, let me start off by saying you’re missing out!! It’s a soft pound cake filled with berry jam, fresh whipped cream and topped with some fresh assortment of berries.
Now imagine that with the combination of a tres leches, all combined to give you a sweet dessert that you can honestly eat every single day.
Preheat oven to 350F and grease a 9×13 inch baking pan.
Next in a bowl, combine the flour, baking soda & powder, and salt. Whisk until everything is well incorporated and set it aside.
Next into a stand mixture or using a handheld mixture, mix the eggs until they’re beaten. Add in the sugar and beat for 1-2 mins until you see a light pale like mixture. Add the oil, sour cream and almond + vanilla extract. Mix until everything is well combined.
Slowly add the dry mixture into the wet, until you have a lump free batter. Add the milk and milk one more time. Transfer batter into baking pan and bake for 30mins or until the center is fully baked
In a bowl combine everything listed under “tres leches mixture” and whisk until everything is fully incorporated. Set aside.
In a blender add the heavy whipping cream and powdered sugar, pulse until the heavy whipping cream forms stiff peaks. Transfer into a bowl and fold in the mascarpone cheese.
Once the cake is baked, cool for 10 mins and using a fork pierced holes all over the cake. Pour the milk mixture all over the cake and wait until everything is well absorbed. Cool in the fridge for 30 mins- 1 hr.
Add the whipped frosting on top and garnish with fresh assortment of strawberries, blueberries or any berries of choice. Dust on powdered sugar and enjoy!
Notes
If you don’t have a blend tec blender that can make fresh whipped cream you can use a stand or hand held mixture and whisk everything until you have stiff peaks. I have used my blend tec and ninja bullet in the past to make fresh whipped cream.
Turn this cake into cupcakes, simply fill each cupcake liner with batter and bake for 15-20 mins until center is fully cooked (check with toothpick or sharp knife). Poke holes with toothpick or fork and add 1 tbsp or more of the milk mixture.
