This is by far my favorite pizza I’ve made, I love how spicy it is and the flavor combination is just genius. Barbacoa is a spicy, smoky and sweet marinate used in the Mexican cuisine, originally the marinate is for shredded pork tacos, but who said you couldn’t that marinate for pizza!!

The smokiness from the chipotle pepper, sweet slices of pineapple and spicy jalapeños is like a party in your mouth! TRUST ME, YOU WILL WANT TO MAKE THIS ASAP!! If you are vegetarian don’t worry you can easily sub the chicken for extra firm tofu or even paneer. *see notes.

Barbacoa Chicken Pizza

Ingredients

Barbacoa Marinate

  • 1 chicken breast half a block of tofu or paneer
  • ½ onion sliced
  • ¼ cup chopped pineapples
  • 3 tbsp pineapple juice * see notes
  • 3 cloves garlic minced
  • 2 chipotle chilis with sauce * see notes
  • 1 tsp lemon or lime juice
  • 1 tsp oregano
  • 1 tsp ground cumin
  • salt to taste

Pizza Toppings

  • store bought or homemade pizza dough
  • 2 cups pizza sauce I use Rao’s marinara
  • peppers & onions sliced
  • pickled or fresh jalapeños sliced
  • pineapple thinly sliced
  • shredded mozzarella cheese
  • pepper jack cheese
  • scallions

Chipotle Sauce

  • ½ cup mayo
  • 2 tbsp sour cream
  • 1 tsp garlic powder
  • 1 chiptole chili
  • salt to taste

Instructions

Barbacoa Marinate

  1. In a bowl mix all the ingredients for the barbacoa marinate, test for salt and then add the chicken or tofu. Set aside for 20mins or over night to marinate.
  2. On a hot skillet, drizzle some oil and cook the marinated barbacoa chicken, 3 mins each side or until its cooked throughout. Set aside and let it cool. Once the chicken is cooled down a little bit, shred it or or chop into a bite size pieces.

Chipotle sauce

  1. Mix everything in a blender or food processor. Set aside until ready to use on pizza.

Assembling Barbacoa Pizza

  1. Roll out pizza dough, spread a thin layer of sauce and add a layer of cheese. Next add the shredded barbacoa chicken, peppers, onions, jalapeños and pineapple. Add a good layer of cheese and top and dollap a litte more pizza sauce on top.
  2. Bake in the oven at 400°F until bottom is crispy and dough is cooked throughout. Drizzle pizza with chiptole sauce and sprinkle scallions or cilantro on top, Enjoy!

Notes

  • This is the canned chipotle pepper I used.
  • You can use my homemade pizza dough recipe, linked here
  • You can marinate the chicken over night for best results.
  • If you are vegetarian you can use half a block of extra firm tofu, marinate and cook the same way, same applies for paneer.
  • I personally love using canned pineapple, because you get the juice also, less hassle and easy clean up. You an buy sliced pineapples and sliced them yourself, the chopped is fine to, but sometimes too mushy.
