A baked cheese sandwich must be a “Southern thing” but I swear it needs to be a world wide thing! If you don’t know what a baked cheese sandwich is, it’s pretty much the only sandwich you will ever want and have in your lifetime.
The crispy cheese is a GAME CHANGER! It almost adds the same texture as chips in your sandwich but with a nuttier taste and if you use Boards Head spicy 3 Pepper Cobly jack cheese….you’ve pretty much entered HEAVEN! The cheese has a kick to it and when it’s baked and the edges get nice and crispy the cheese develops a ton of flavor.
Another thing I love adding to my baked cheese sandwiches is a semi homemade sweet and smokey chipotle and caramelized onions. The chipotle mayonnaise is so great to have on hand and I usually make a big batch because aside from sandwiches you can use it as a dip for French fries, in coleslaw and wraps!
You can breakdown the steps of this sandwich beforehand, I like to make my caramelized onion a day or two in advance and keep it in the fridge until the day I’m ready to use it. You can reheat it in the microwave or stove top for a few mins to get it warmed up.
I typically love making this sandwich on Whole Foods Ciabatta bread, theres nothing like it! It holds up so well no matter how much you fill it with, but the taste and the softness is just something you can’t beat. I use this bread a lot when I make my pulled chicken sandwiches because it holds the coleslaw so good without getting the bread soggy.
4–6 slices of Boars Head 3 Pepper Colby Jack Cheese
Lettuce or sprouts
Sliced tomatoes
Pickles or cucumbers
Sliced avocado
Instructions
Chipotle Mayonnaise
Combine everything into a bowl, mix until everything is well incorporated and set aside.
Caramelized Onions
Melt butter into a pan and add the onions. Cook on med heat for 5 mins and add the remaining ingredients: soy sauce, brown sugar, garlic powder. Cook until onions are slightly wilted. Set aside.
Baked Cheese Sandwich
Line a baking sheet with parchment paper and place sliced cheese on top. Bake at 400F for 4-6 mins until edges are nice and brown and cheese is bubbly. Remove from oven and set aside to cool.
Toast the ciabatta bread and spread on the chipotle mayonnaise. Layer with lettuce, tomatoes and pickles. Add the baked cheese on top and continue to layer with caramelized onions and sliced avocado.
