Spice apple bundt cake with cardamom caramel is exactly what you need for this thanksgiving! I love to bring pumpkin pie or even a apple pie to thanksgiving but this year I thought why not make something that everyone can enjoy without all the hassle of making a crust, filling and most importantly transportation! For some odd reason pies don’t sit well in a car even if you hold on to it for dear life, well maybe its just my luck haha.

Any who, this bundt cake looks super fancy and will have all your guest wondering how you made such a fancy dessert without all the fuss! Its one bowl, no stand mixer or hand held mixer required, literally a dump and go recipe!

Apple Spice Bundt Cake with Cardamom Caramel Sauce

Ingredients

Apple spiced cake

  • 1 apple of choice, I used Granny Smith diced
  • 1 cup oil
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3 cups flour
  • ½ cup apple sauce
  • 2 eggs *See notes for eggless
  • 2 tsp vanilla extract
  • 2 tsp baking soda
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt

Cardamom Caramel

  • 4 tbsp butter
  •  cup heavy cream
  • 1 cup brown sugar
  • 1 tsp ground cardamom
  • 1 cup powdered sugar
  •  cup pecans chopped

Instructions

Apple spiced cake

  1. Preheat oven to 350°F and spray the bundt pan with non stick cooking spray.
  2. In a large bowl, mix together oil, both sugars, apple sauce, eggs and the spices.
  3. Next add in flour and baking soda, mix this with a wooden spoon until everything is well combined.
  4. Next fold in your diced apples and give it one final mix. Transfer everything to the bundt pan and place in the oven at 350°F for 40-45 mins, until the center is cooked.

Cardamom Caramel

  1. In a small sauce pan, add butter, brown sugar and ground cardamom. Mix everything together until the sugar is dissolved (4-6 mins) on med low heat. Next gently add in the heavy cream and stir, you will see the color from dark to light. Add in the powdered sugar and whisk the caramel sauce until you no longer have any lumps from the powdered sugar.
  2. Drizzle the cardamon caramel over the cake and sprinkle with pecans. Enjoy!

Notes

  • Once the cake is done baking and and starts to cool off, start making your caramel sauce because if you make it in advance it will harden.
  • For eggless version, replace 2 eggs with 1/3 cup of full fat yogurt.
