When you are in need of a quick and easy dessert that doesn\u2019t involve that much work, this recipe is about to become your favorite. It has roots that go <a href=\"https:\/\/timesofindia.indiatimes.com\/life-style\/food-news\/the-fascinating-story-of-halwa\/articleshow\/76814348.cms\">as far back as the 13th century<\/a> and every state in India has their own version of the dessert. Carrot halwa is one of the most-loved variants of the dish \u2013 and one of my personal favorites!<\/p>\n\n\n\n<p>The original version of halwa is made by simmering fresh grated carrots with milk, sugar, and ghee. This fusion dessert recipe is similar, but takes the mess out of serving and eating.&nbsp;<\/p>\n\n\n\n<p>I wanted to create an approachable version of this classic to brighten up your dinner tables in less than half an hour. Rather than a pudding-like consistency, you get something you can roll into a truffle. block;\">Over med\/high heat add the ghee, followed by the ground cardamon, cook for 30 seconds until fragrant.<\/span><\/div><\/li><li id=\"wprm-recipe-3309-step-0-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Next add the grated carrots, cook for 5 mins until the carrots start to soften up, you will start to see the carrots relase the water it will soon start to dry up. <\/span><\/div><\/li><li id=\"wprm-recipe-3309-step-0-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add your milk and sugar to the carrots, cook this mixture until the milk is absorbed into the carrots, this step will take some time 8-10min. <\/span><\/div><\/li><li id=\"wprm-recipe-3309-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Add the condensed milk and shredded coconut, keep mixing until the condensed milk is dried out. Turn off stove and mix in the raisins and cashews <\/span><\/div><\/li><li id=\"wprm-recipe-3309-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Spread the mixrure in a baking tray or plate, let mixture cool for about 10 mins, to speed up the process pop it in the freezer for 5 mins. In the mean time melt your chocolate chips in the microwave or stove top. Once the truffles are rolled out, place melted chocolate in a ziplock bag and cut a tiny hole on the corner, drizzle the tops of the truffles and let the chocolate cool off.
