For many of you that follow me on <a href=\"https:\/\/www.instagram.com\/thetableofspice\/\">Instagram<\/a> already know this recipe is MUST! I think I drizzled, dunked and even poured this jalapeno garlic queso sauce all over my <a href=\"https:\/\/thetableofspice.com\/spicyveggiechimichanga\/\">chimichangas<\/a>, <a href=\"https:\/\/thetableofspice.com\/spicyadobochickentacos\/\">tacos<\/a>, <a href=\"https:\/\/thetableofspice.com\/spicyblackbeantaquitos\/\">taquitos<\/a> and quesadillas this past weekend. #nojudgementzone #YOLO <\/p>\n\n\n\n<p>I was totally inspired from a Mexican restaurant back home in Massachusetts, shout out to all my patriots, red sox and the bruins fans!! Okay so back to the recipe and what really inspired me to create this mouth watering dish, for many of you that have been to La Carreta, you already know exactly what this queso is all about. But for the ones who have no clue what I&#8217;m rambling about, let me just tell you that its pretty much the worlds<em> best queso <\/em>you\u2019ll  ever get your hands on. <\/p>\n\n\n\n<p>No I&#8217;m not making this up, but if you must know EVERYONE who knows of La Carreta&#8217;s queso will tell you that your missing out BIG TIME, YEP its that good. Not to mention every time I visit back home, or how much I&#8217;m craving my moms homemade food I still make it a point to get some queso from there. My husband who was born and raised in New Jersey has confirmed that its the <em>best queso<\/em> he&#8217;s had, and that&#8217;s saying a lot people because this man is pretty picky, especially when it comes to food! <\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter\"><img data-recalc-dims=\"1\" height=\"1920\" width=\"1440\" decoding=\"async\" loading=\"lazy\" src=\"https:\/\/i0.wp.com\/thetableofspice.com\/wp-content\/uploads\/2019\/08\/IMG_0064-1440x1920.jpg?resize=1440%2C1920&#038;ssl=1\" alt=\"\" class=\"wp-image-1254\"\/><\/figure>\n<\/div>\n\n\n<p>Now of course I wasn&#8217;t going to leave you hanging with just the queso, even though you can add it to any Mexican dish, one of my favorite ways to incorporate this queso is with my chile relleno enchiladas.<\/p>\n\n\n\n<p> This recipe is basically the same as traditional chile relleno&#8217;s but,  I\u2019ve chopped up the roasted poblanos and combined with the cheese in an  enchilada. decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Place the poblano peppers on a foil lined cookie sheet. Broil as close to the heating element in your oven for 10 minutes. Flip once the top of the poblano\u2019s are slightly charred. Then broil until the other side is charred as well. Remove and place the peppers in a ziplock bag and allow to steam for 5-7 minutes. Remove from the bag and peel off the skin. Cut open and remove the seeds and stem. Dice into small pieces and add to shredded cheese. Set aside <\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Jalapeno garlic queso sauce <\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-1258-step-1-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">In a med sauce pan, melt the butter and add the diced jalapenos and onions. Cook for 4 mins on med heat until onion is translucent and jalapeno is fragrant. <\/span><\/div><\/li><li id=\"wprm-recipe-1258-step-1-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Next add salt, pepper and garlic powder. Whisk in the milk and add the sliced cheese. Let this  come to simmer about 7-10 mins on med heat. DO NOT let this come to a boil just a low simmer (small bubbles will form on the outer rim). <\/span><\/div><\/li><li id=\"wprm-recipe-1258-step-1-2\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Once the cheese has melted and the queso sauce has simmered, turn off the heat and let it cool for 10 mins. After the 10 mins, whisk the sour cream in. Whisk the sour cream before adding it into the queso so you don\u2019t have any lumps. Set aside <\/span><\/div><\/li><\/ul><\/div><div class=\"wprm-recipe-instruction-group\"><h4 class=\"wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold\">Assembling <\/h4><ul class=\"wprm-recipe-instructions\"><li id=\"wprm-recipe-1258-step-2-0\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Heat the red enchilada sauce in a microwave safe bowl for 3 mins, or heat on the stove top in a sauce pan. In a skillet or pan drizzle some oil, add the corn tortillas one at a time into the oil and cook until soft. About 15-20 seconds per side. ladle \u00bc cup red enchilada sauce in the sauced dish and place about couple tbsp of filling in the tortilla. Roll up and place seam side down. Continue with remaining tortillas. Pour the queso sauce over the enchiladas and sprinkle diced tomatoes, scallions down the middle of the enchiladas. <\/span><\/div><\/li><li id=\"wprm-recipe-1258-step-2-1\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\"><span style=\"display: block;\">Place uncovered in the oven and bake for 7-10 minutes at 350\u00b0F or microwave for 1-2 mins covered. Remove from the oven. The cheese and sauce should be bubbling hot.
