Spicy Mac and cheese bites

Mac and cheese is definitely one of the best comfort foods (I’m willing to argue about this)… but why stop there when you can take it a step further with these Spicy fried Mac and Cheese Balls? This recipe is perfect for any type of Mac and cheese! I personally love to use my left over spicy Mexican Mac and cheese for this recipe because of the extra kick of spice!

You can use regular Mac and cheese and just add spices to the breadcrumbs like I did! I made an extra batch and froze these Mac and cheese bites! Now whenever I want them, I just pop them out of the freezer and place them in the air fryer for couple of mins and bam, Mac and cheese bites are served.

Spicy fried Mac and cheese bites

Ingredients

  • 2-3 cups leftover mac and cheese
  • 1 tbsp milk
  • 2 cups panko bread crumbs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • 4 cups Bertolli cooking oil

Instructions

  • In a deep plate or large bowl, mix panko bread crumbs, onion+garlic powder and smoked paprika. Mix until everything is well incorporated and set aside. Whisk eggs with milk and set aside.
  • Using a cookie scoop or a large spoon; spoon out about 2-3 tablespoons of the mixture at a time and shape into 1- 2 inch balls, compressing slightly.
  • Dip balls in egg mixture, then coat in panko, I like to double coat mine for an extra crispy outside.
  • Heat oil in a deep pot and fry a couple of mac and cheese balls at a time (make sure not to over crowd the pot) for 3 to 4 minutes per batch, until golden.
  • Drain on a paper towel-lined plate and serve hot with marinara. Enjoy!°

Notes

  • You can freeze these after you have dipped them in breadcrumbs and use them whoever you need them.
  • Place in air fryer at 390F for 5-7 mins until golden brown. I recommend spraying the Mac and cheese bites with a little bit of cooking spray to get that golden brown taste!
