
Ladies and gentlemen let me re introduce you to the BEST homemade Mexican pizza you’ll ever! Not only did I include two different versions of this recipe (baking and frying) but I also included a list of different tortillas you can use for this recipe THAT WILL ACTUALLY WORK! I know the brand that is famous for this recipe is not available everywhere so I ended up doing some research + trial and error experiments with different tortilla’s that will give you the best taste, crunch, and replicate Taco Bell’s Mexican pizza.

HELPFUL NOTES: (please read before proceeding to make this recipe)
- If you can get a hold of Azteca tortilla, highly recommended using them for this recipe.
- Theres two different types of Azteca tortilla you can use, Option 1 or Option 2, both are great and I have included written instructions on how to use these along with a video on my instagram.
- If you CAN NOT get a hold of the Azteca tortilla try La Brandertia flour tortillas or Mission flour tortillas. Make sure you cut small slits into each of these tortillas before frying.
- I used old El Paso Enchilada sauce for my recipe because I found it to have the most authentic taste to the Taco Bell Mexican pizza recipe.
- I also added Taco Bell hot sauce on top, but you can add traders joes hot taco sauce as well.
- I used my homemade re fried beans for this recipe but you can use your favorite canned re-fried beans.
- I’ve included option 1 and 2 in the recipe below, only do option 1 if you are using this specific tortilla.

Mexican Pizza (Taco Bell copy cat)
Ingredients
- 4 med tortillas of choice
- oil for frying
- 2 cups re fried beans warmed up
- 1 tomato diced
- ¼ cup scallions thinly sliced
- pickled or fresh jalapeños sliced
- 1 cup Colby jack cheese shredded
- 1 10oz can Old El Paso Enchilada sauce
Instructions
Option 1
- Baking the Azteca taco shell tortilla on a pizza tray or baking sheet at 350°F for 7 mins, flipping half way through or until the tortilla is slightly golden brown.
Option 2 (For any soft flour tortilla’s)
- In a med size pan, fill about 1.5 inch with oil, heat up the oil on med high heat. Cut 20-30 small slits in your flour tortilla’s and place in the pan to fry. Fry for 1-2min on each side until slightly golden brown. Drain on a cooling rack.
Assembly
- Next layer your tortilla with beans, cheese, jalapeños and drizzle 1-2 tbsp of Enchilada sauce. Add the 2nd layer of tortilla on top and add another 2-3 tbsp of Enchilada sauce along with a good sprinkle of cheese, tomatoes and scallions.
- Pre- heat oven to 400°F.
- Place in the middle rack of the oven, and cook until the cheese gets nice and melty! Add additional hot sauce on top and anything else you like such as sour cream or more scallion and enjoy!
