Crispy Garlic Fried Rice

Who doesn’t love carbs especially fried rice!! Ill be honest I hate the fried rice you get at the restaurants because its just so bland, no amount of sriracha will do. Also I only like egg whites in my rice which is also unheard of because no restaurant out there has been able to get my order right.

With that being said, I wanted to share this quick recipe for my version of fried rice and hope y’all enjoy it as much we do. You can use day old rice which is preferred or you can use which ever form of grains you like. I have made this a million times using brown rice as well and it comes out BOMB!

Garlic fried rice

Ingredients

  • 1-2 cups rice of choice cooked and cooled
  • ¼ cup frozen peas
  • ¼ cup onions sliced
  • ¼ cup carrots sliced
  • ¼ cup bell peppers sliced
  • 2 tbsp oil
  • 2 tbsp jalapenos chopped
  • 3 tsp sambal
  • 3 tsp soy sauce
  • 2 tsp hoisin sauce
  • 3 cloves garlic minced or grated
  • ½ tsp salt
  • ¼ tsp toasted sesame oil
  • ¼ tsp black pepper
  • ¼ tsp sugar
  • ¼ tsp lemon juice
  • 1-2 eggs

Instructions

  • In a pan on med-high heat up 2 tbsp oil, add the carrots and bell peppers. Let this cook for 2 mins. Next add in the onions, jalapeños, peas, salt and pepper. Stir continuously and let this cook for 2 mins.
  • Add the rest of the seasoning.(sambal, soy sauce,hoisin sauce, sugar, lemon juice and toasted sesame oil.) After you add all the ingredients turn off the stove and add the garlic. Add the cooked rice and mix until well incorporated.
  • I like to scramble my eggs in a separate pan while the veggies and incorporate them into the rice at the end! Garnish with scallions and cilantro if you like. Enjoy!

Notes

  • Feel free to use any veggies you have on hand, mushrooms, broccoli, green beans etc.
  • Using mixed frozen veggies is perfect, saves time and also you get more variety of different veggies than you normally would use or even have on hand.
  • For added protein, chicken and shrimp go very well with this dish.
