
If you’ve never had California Pizza Kitchens Tostada pizza, are you even guju?!?! I promise you its one of those staple dishes that EVERY Indian person knows about, even grandma and grandpas know what this is all about!
Its a soft pizza dough that’s layered with black beans, cheddar cheese and melted down to perfection, then its layered with crispy iceberg lettuce, tomatoes avocados, tortilla strips and tangy/sweet salsa. Now of course I had to put my own twist on things because clearly it’s not The table of spice unless I make my own version. So I did skip the salsa and added Trader Joe’s habanero sauce instead and made a quick semi home made jalapeño ranch that was 100 times better than adding just plain old salsa. Don’t worry everything is listed below, including brands, tips and tricks 🙂

CPK Tostada Pizza
Ingredients
- homemade or store bought pizza dough
- 1 15oz can Amys black refried beans
- 2 cups shredded colby jack cheese
- 1 Avocado diced or sliced
- ¼ cup scallions finely diced
- 1 large tomato diced
- 1 small red onion finely diced
- 2 cups tortilla strips *see notes
- ½ iceberg lettuce thinly sliced
Jalapeño Ranch
- 1 bottle Briannas buttermilk ranch
- 1 or 2 jalapeno
- 3 tsp garlic powder
Instructions
Jalapeño Ranch
- Add the ranch, garlic powder and roughly chopped jalapeños into a blender or food processor, blend until everything is smooth. Store in a airtight jar in the fridge until ready to use.
Tostada Pizza
- Preheat oven to 380°F.
- Roll out the pizza dough until its 1/2 inch thin. Transfer the pizza dough onto a pizza screen or pizza pan.
- Layer on the black refried beans and place in the oven for 15-18 mins, or until the pizza is cooked, remove the pizza from the oven and sprinkle the cheese and place it back in the oven for 2-4 mins until cheese is melted.
- Remove pizza from oven and start layering the pizza with lettuce, tomato, onions, avocados, scallions, jalapeños ranch and garnish off with tortilla strips and scallions. Enjoy!
