Caprese Burrata salad with parmesan lemon arugula

I couldn’t wait till summer to enjoy this salad, I think I eat this salad so often that I sometimes forget its a salad! If you love a refreshing + light salad, this salad is the one for you and you should definitely make it asap! The small hints of truffle, parmesan and lemon is the perfect blend to this burrata salad, I love to serve it with toasty baguette but you can serve It with any toasty bread of choice or just eat it as is!

Pro tip: You can turn this salad into a sandwich by simply layering everything between two toasty pieces of baguette bread, and spread a little presto and add some mozzarella cheese! The best burrata sandwich you’ll have!

Tomato burrata salad with lemon parmesan arugula salad

Ingredients

  • 2 tomatoes sliced
  • 3 tsp balsamic vinegar glaze *see notes
  • salt and freshly ground black pepper
  • 4 cups arugula
  • 2 tsp truffle oil
  • ½ lemon
  • Bellavitano merlot cheese or parmesan cheese
  • 1 truffle burrata or reg burrata

Instructions

  • In a large plate, lay out your tomatoes on the edge of the plate, you can over lap them a little if you like. Next drizzle on the balsamic glaze and add salt and freshly ground black pepper.
  • In a mixing bowl, add in the arugula, truffle oil, freshly squeezed lemon juice and grate 1/4 cup of the Bellavitano merlot cheese or parmesan cheese. Lightly toss everything together and place in the middle of the plate along with the tomatoes.
  • Add the burrata on top of the arugula salad and add a little drizzle of truffle oil and salt and freshly ground black pepper. Serve with toasted baguette and enjoy!

Notes

  • I love to use green and orange tomatoes for this recipe, they are in season so you’ll be seeing them a lot more at your local grocery stores. You can use any tomato of choice, but the fresher and more in season is obviously better. 
  • I used traders joes burrata but you can any burrata of choice. 
  • This is the balsamic glaze I used for this recipe, but you can use any brand of choice.
