Bang Bang Fried Avocado Tacos

crispy bang bang tacos with creamy tangy coleslaw and fried Avocado for a vegetarian twist.

These crispy fried avocado tacos are not your average tacos, they are breaded in seasoned panko breadcrumbs, and paired with a sweet chili coleslaw that will have you mouth watering! I topped the tacos off with my jalapeno ranch but you can use any hot sauce of choice!

My inspiration for these tacos came to me at 11pm when I saw a commercial for these delicious fish tacos, unfortunately I’m not a huge fan of fish or fish tacos so I thought why can’t I create something similar but without the fish! Something about these tacos really hit home, I mean San Diego CA! I miss anthemic Mexican food so badly and miss the simple tacos that I use to eat at the taco stands! This taco is very similar to the fish taco, breaded + fried and topped with a crunchy coleslaw!

Ingredients

Panko Fried Avocado 

  • 2 avocados peeled and sliced
  • 1 large egg egg white only, discard yolk
  • 1 cup panko breadcrumbs
  • 2 tsp taco seasoning
  • 1 tsp smoked paprika
  • 6-8 corn tortillas
  • salt to taste

Sweet Chili Coleslaw 

  • 1 bag coleslaw
  • 2 tbsp mayo
  • 2 tbsp sweet chili sauce
  • 1 jalapeno diced
  • ¼ cup cilantro chopped
  • ½ small red onion sliced
  • 1 tbsp vinegar

Instructions

Sweet Chili Coleslaw 

  • In a bowl, mix everything listed under sweet chili coleslaw and place in the fridge until ready to use. 

Panko Fried Avocado 

  • In two small seperate bowls, make the breading station with egg whites and panko breadcrumbs. In the bowl with panko breadcrumbs add the taco seasoning and smoked paprika, mix everything together and dip the avocado slices into the egg white then into the breadcrumbs. 
  • In a small shallow pan, add some oil and fry the avocado until golden brown. Set aside to drain on a paper towel and cook the tortillas in a cast iron skillet
  • To assemble the tacos, place the tortillas on the plate, add the coleslaw and avocado on top, drizzle with ranch or hot sauce of choice. Enjoy! 

Notes

  • You can air fry the avocado slices at 400F for 5-7 mins until they’re golden brown.
  • I used avocado oil to fry, its the healthier option and has a high smoking tempt.
  • Sweet chili sauce can be found at any grocery store in the International aisle.
