Maggi Masala Noodles

Healthy Maggi Masala noodles made with millet rice brown noodles in a rich savory spicy broth with a indo Chinese twist

Maggi noodles were a staple in everyones home growing up and even now, I reach for Maggi noodles anytime I want a quick comforting bowl of spicy noodles. Now I do like to put a twist on my Maggi noodles, by adding some soy sauce and other ingredients that definitely give it a Indo – Chinese twist but feel free to make it any way you like it. I switched out the Maggi noodles with an organic brown rice noodles from a brand I love! I also use separate Maggi noodle masala that I found at my Indian grocery store. I’ve linked everything below in my notes for your reference.

Healthy Maggi (Masala Noodles)

Ingredients

  • 1 packet Organic Millet Brown rice ramen by Lotus Foods
  • 1 packet Maggi masala packet
  • 1 tbsp oil
  • 1 serrano pepper sliced
  • ¼ cup onion diced
  • 1-2 cloves garlic minced/grated
  • 3 tsp soy sauce
  • 1 tsp toasted sesame seed oil
  • cup water
  • salt to taste
  • scallions sliced
  • hot oil

Instructions

  • In a sauce pan, boil the drain the noodles. Rinse with cold water and set aside.
    *I only used 1 Millet brown rice ramen noodle, you can use more but make sure to double the recipe.
  • In the same sauce pan, heat up the oil on med/high heat and add the Serrano peppers. Cook this for 1 mins so the oil gets infused.
  • Next add the chopped onions and garlic, cook for 1-2 mins and add the Maggi masala packet along with the soy sauce and toasted sesame seed oil.
  • Stir everything and cook for 30 seconds, next add the 1/3 cup water and bring everything to a boil. Add the noodles, stir and transfer everything into a bowl.
  • Garnish with scallions and hot chili oil, enjoy!

Notes

  • The brand of noodles I used for this recipe can be found  at whole foods, Kroger, fresh market, target and Costco. 
  • I found my Maggi masala packets at my local Indian grocery store, but you can also find them on amazon.
  • I used my ghost pepper chili oil in this recipe but you can use any chili oil you have as a garnish.
