If you know about the Mediterranean veggie sandwich from Panera, then you already know how refreshing, light and delicious it is! I usually get my sandwich grilled or into a panini style but lately I’ve been enjoying it just toasted. Either way, this sandwich is super easy to whip up and not to mention how much you can customize it, I personally don’t like feta cheese so I replaced it with Boars head caramelized onion cheese, (can be found in your deli section of your grocery store). I also am not a fan of the cilantro hummus so I replaced it with Boars Head chipotle hummus which not only gave it extra spice but the smokiness really brought all the flavors together!

Mediterranean Veggie Sandwich

Ingredients

Scale
  • 4 sliced whole wheat bread or any bread of choice
  • 4 slices Boards Head caramizled onion cheese or any Boards head cheese of choice
  • Boars Head chipotle hummus
  • ½ cup arugula
  • 1 mini cucumber thinly sliced
  • ½ red onion thinly sliced
  • 1 roma tomato sliced
  • ½ cup roasted red peppers

Instructions

  • Spread the hummus on one slice of bread, add the sliced cheese. Top with sliced onion, Roma tomato, roasted red pepper, cucumber, top it off with arugula.
  • Place the top piece of whole wheat bread on top of the arugula and enjoy! For a panini pressed sandwich, simply place the sandwich in a hot panini for 1-2 mins and enjoy!

Notes

  • You can roast your own red peppers or buy them already roasted. You can find these in your grocery store in the same aisle as pickles.
  • Boars head has a huge selection of cheeses, which I’ve been using for years, you can simple use feta, American or even cheddar for this sandwich, anything you like!
  • I used a fresh baked loaf of whole wheat roasted garlic bread from my local Publix, but feel free to use Daves killer or any bread that’s hearty.
