This delicious, easy veggie sub has been taken up a notch by my French onion spread. I’ve been a huge fan of veggie subs but sometimes it can get a little boring with the traditional mayo and mustard, this French onion spread also doubles as a dip! You can substitute the mayo and sour cream for plant base and it still comes out delicious.

French Onion Veggie Subs

Ingredients

French Onion Dip

  • 3 tbsp butter
  • 1 small onion diced
  • 1 tbsp brown sugar reg sugar is fine as well
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt and black pepper to taste
  • 1 tbsp soy sauce
  • 1 cup sour cream
  • ¼ cup mayo
  • ¼ cup chives finely chopped

Additional Sub Ingredients

  • 1 large sub roll
  • lettuce chopped
  • Tomatoes sliced
  • onions sliced
  • cucumbers sliced
  • sliced cheese of choice

Instructions

  1. In a cast iron skillet over med high heat, add the butter and let it melt.
  2. Next add the onions and cook for 5-7 mins on med/low heat until it starts to become translucent.
  3. Next add all the seasoning and cook the mixture down for another 3-5 mins. Take it off the stove and let it cool down for a bit.
  4. In a bowl mix the sour cream and mayo. Add the onion mixture followed by the chives. Mix everything together until it’s well combined. You can serve as is or place in a airtight container in the fridge and serve it with some potato chips!

Assembling the Sub

  1. Slice the sub roll down the middle, layer on the sliced cheese and toast for a couple mins or until the cheese has melted.
  2. Next add a good layer of the French onion dip, followed by the veggies. Enjoy!

Notes

  • You can make this sandwich using any bread of choice, but I highly recommend you toast the bread.
  • I used Boar’s Head caramelized onion, 3 pepper Colby jack and chipotle gouda cheese. I got them sliced at the deli in my Publix.
  • Left over dip can be used to serve with potato chips, seriously is the best chips and dip because the dip can be served cold or room tempt.
