Dubai Chocolate Cheesecake Cups

Ingredients

Scale

Crust:

  • 610 graham crackers, crushed
  • 6 tbsp melted butter

Cheesecake Filling:

  • 16 oz softened cream cheese
  • 1 cup heavy whipping cream
  • 1 tbsp sour cream
  • 1/3 cup sugar
  • 1 tsp vanilla extract

Pistachio filling:

  • 1/2 tbsp coconut oil
  • 1 cup kataif
  • 1/3 cup pistachio spread

Topping

  • 1 cup melted chocolate
  • 1/4 cup crushed pistachios

Instructions

​​Make the Crust

  1. Add the graham crackers into the Lotus Power spin and pulse 3-4 times until the crackers are sand like texture.
  2. Mix crumbs with melted butter until everything is evenly coated.
  3. Press the mixture firmly into the bottom of your cups or small jars.
  4. Place cups in the fridge while you prepare the filling.

Cheesecake Filling

  1. Add the softened cream cheese, heavy whipping cream, sugar, sour cream, and vanilla extract into the Lotus Power Spin and adjust the mode to puree. 
  2. Spoon the cheesecake filling over the crust layer.
  3. Place back in the fridge to chill while you make the pistachio layer.

Pistachio Layer

  1. Heat coconut oil in a pan over medium heat.
  2. Add kataifi and sauté until lightly golden and toasted.
  3. Remove from heat, let cool slightly, and mix in pistachio spread until everything is coated.
  4. Spoon the pistachio mixture on top of the cheesecake cups and gently press down.

Topping

  1. Pour melted chocolate over the pistachio layer.
  2. Sprinkle crushed pistachios on top.

 Chill & Set

  1. Place the cheesecake cups in the fridge for at least 3 hours, or overnight, to fully set.
  2. Serve chilled, no baking needed and enjoy!

Do you whip the heavy cream first and then mix in or do you put heavy whipping cream in with the softened cream cheese? I see whipped heavy cream in the ingredients list but not in the directions. Can’t wait to try this out.

Hi Sheetal, so sorry about the confusion, but I’ve updated the recipe and made it more clear. Add everything to the blender including the heavy whipping cream and then blend it all together.
