Spicy Adobe Chicken

Ingredients

Scale
  • 12 lbs chicken breast
  • 2 tbsp avocado oil
  • 3 chipotle peppers – roughly chopped
  • 2 tbsp chipotle sauce from the can
  • Juice of 1 lime

Seasoning Mix

  • 2 tsp each of the following:
  • onion powder
  • garlic powder
  • oregano
  • ground cumin
  • smoked paprika
  • salt

Instructions

  1. In a large bowl combine: oil, lime juice, chipotle peppers and sauce.
  2. Sprinkle in all the seasonings and mix together.
  3. Using a sharp knife, slit some sections into the chicken breast and then add into the marinate.
  4. Mix everything together until it’s well combined and chicken is covered in marinate. Cover bowl with plastic wrap or to make things easier transfer the marinated chicken into a large ziplock bag.
  5. Cook the chicken on a hot cast iron skillet with a little bit of oil. Cook until the chicken is fully cooked through out.
