Welcome to the first recipe of “Dine in Dupes” where I share a ton of crave worthy copy cat recipes from your favorite restaurant + fast food chain, using better ingredients and all within a reasonable time.

If you love Panda Express then today’s recipe will resonate with you even if you don’t eat meat! Veggie Chow Mein is flavorful noodle dish that you can have as a side in replacement of the rice or just as an entree.

It’s filled with crispy veggies like celery, carrots, cabbage and spring onions that are all mixed together in this lip smacking sauce that is very simple but also has some of the best flavor combinations.

The sauce is a mixture of soy sauce, oyster sauce (you can use vegetarian version), sriracha, sesame oil, rice wine vinegar, garlic and brown sugar to balance everything out. Instead of adding water to the sauce I like to incorporate a little bit of veggie broth but you can use chicken bouillon as well.

Veggie Chow Mein

Ingredients

Scale

Sauce

  • 1/4 cup veggie broth
  • 3 tbsp oyster sauce
  • 2 tbsp soy sauce + sirracha
  • 1/2 tbsp toasted sesame seed oil
  • 1 tsp rice wine vinegar and brown sugar
  • 1/4 tsp white pepper
  • 3 cloves garlic finely minced or grated

Veggies

  • 1 onion sliced
  • 2 carrots Julian
  • 1 cup cabbage finely sliced
  • 3 stalks of scallions cut into small pieces

Noodles of choice

  • 1 (12oz) package of noodles

Instructions

Sauce

  1. Add all the ingredients listed under “sauce” into a bowl. Mix everything together until it’s well incorporated. Set aside until ready to use.

Noodles

  • Boil and cook accordingly to package.

Veggies

  1. Into a pan, drizzle some oil and cook the onions and carrots on med/high heat 1-2 mins. Next add in the cabbage and cook for additional 1 min.
  2. Add the noodles into the pan with veggies, along with the sauce and mix everything together until its well incorporated.
  3. Add the scallions into the noodles and serve! Enjoy.
