Ingredients
Brownies
- ½ cup melted butter
- 3 tbsp oil
- ½ cup brown sugar
- ½ cup granulated sugar
- 2 eggs I used egglands best
- 1 cup Unsweetened coco powder
- 1 tsp vanilla extract
- 1 tsp salt
- 1 cup chocolate chips
Mint cream cheese topping
- 1 7oz cream cheese
- 2 tbsp sugar
- 2 tsp mint extract
- 1–2 drops green food coloring *optional

Mix all the ingredients together for the cream cheese mixture and set aside.

Preheat the oven to 350°F and line a 7×11 inch baking tray with parchment paper and set aside.

In a large bowl combine melted butter, oil and both sugars.Add the eggs, vanilla extract and salt then whisk until evenly combined.

Fold the dry ingredients into the wet ingredients. Add in half of the chocolate chips.

Pour the batter into the prepared pan, then smooth the top. Top with the remaining chocolate chips and cheesecake mixture. Add dollops of the cheesecake mixture on top and swirl with a toothpick or sharp knife.

Bake for 30-35 minutes, or until the center of the brownies is no longer jiggly. Poke with a toothpick to test! Let cool to room temperature before removing from the baking tray and slicing. Enjoy!
